White Chili

1 large jar Great Northern Beans6 Cups Chicken Broth (reduced-fat)1 large onion, chopped2 T garlic, minced8 oz. green chili peppers1 T oregano1 T cumin1/2 t red pepper1/2 t salt1/2 t black pepper4 C chicken breast, cooked and cubed1.5 C Monterey Jack cheese, shredded3/4 C sour cream, reduced-fat
Combine all ingredients, except chicken, in large stockpot or Dutch oven. Bring to a boil, then reduce heat and simmer, covered, 1 hour. Add chicken and simmer 30 minutes longer. Alternately, you can sear the chicken with the onions and garlic in the stockpot/Dutch oven first, in a little olive oil, then just add the rest of the ingredients on top and simmer for about an hour.
