Vegetarian Black Bean Tex Mex

*Trader Joe's Basmati Rice Medley, 1 cup rice to 2 cups water*Organic Mushrooms 1 cup sliced*Salsa, kirkland signature organic salsa medium regular jar*Trader Joe's Organic Black Beans 1 can*Earthbound Farm Organic Yellow Onions (full nutritional data for a medium onion) 1 onion diced
1)Make 1 cup of rice to 2 cups of water per package instructions
2)Dice onions & mushrooms, then saute veggies
3)Drain and rinse black beans
4)Combine salsa, onions, mushrooms, black beans with rice once rice is complete allow to cook through about 10 more minutes.
5)Serve over nachos
6)Top with 1/4 diced avocado per serving (not included in calorie count)
