Birthday Cake w/Whipped Frosting

Ingredients
Cake:Yellow Cake mix2 9-inch cake pans. Prepare and bake as directed.Lemon Curd Filling: 2 cups (see Lemon Curd Filling with my username)Frosting:1/2 cup powdered sugar1 tsp vanilla3/4 cup heavy whipping cream
Directions
Cake:
Prepare and bake cake as directed on package. Cool completely on wire racks.

Frosting:
Whip all ingredients together until it comes to a spreading consistency.

To Assemble Cake:
Make sure cakes are cooled. Place 1 layer on a serving plate. Put 2 cups lemon curd filling and top with second layer of cake. Coat with prepared frosting. Cut and serve with fresh raspberries or fruit of your choice.

Serving Size: Makes an 9 inch, 2 layer cake, cut into 16 pieces

Once you add the lemon curd filling (2 cups), one piece of cake is 298.95 calories. That's about 2 Tbsp of lemon curd per slice of cake, if cut into 16 pieces.
