4 medium potatoes, peeled and cubed1 cup carrots, peeled and cubed1/2 cup onion, chopped1 Tbsp. Butter1/2 tsp. salt1/2 tsp. Lemon-pepper
Combine prepared vegetables in microwavable casserole dish. Dot with butter. Sprinkle with salt and lemon-pepper. Microwave on high at 5 minute intervals until vegetables are cooked.

Thanks for this recipe... it worked out quite well for me (cut it down to one serving size as I was up late blogging, and craving some roast veggies, but didn't want to wait forever with the oven)... I altered it by seasoning with black pepper, specialty salt as well as herbs/spices - yummo! - 11/17/15
