Curry Sweet Potato Casserole

2 cups WaterTomato Bouillon1/2 Sweet potato, cut into 1/2 inch cubes8 Baby Carrots cut into 1/2 inch pieces5 Parsley root, cut into 1/2 inch pieces1/4 cup onion chopped2 tsp Garlic1/4 tsp garlic salt1 Tbsp Basil1 tsp Red pepper flakes1-1/2 tsp Curry powder1 tsp Turmeric5 baby bella mushrooms, sliced1/2 cup fresh Spinach1/4 cup toasted slivered Almonds1 Tbsp toasted Sesame Seeds
Put all ingredients in a large frying pan on high heat except mushrooms, spinach, almonds and sesame seeds, stirring often. When water has mostly cooked down add mushrooms. Turn heat down to medium and continue cooking for about 2 minutes, add spinach and continue stirring for 1 minute. Add almonds and sesame seeds and serve.
