Poached Salmon in cream sauce

Ingredients
16 oz Salmon fillet. If skin is on, cook this side first and peel skin off.3/4 c. of chicken stock or broth1/4 -1/3 c. heavy whipping cream
Directions
Spray smallish nonstick fry pan with cooking spray.
Heat pan and add the chicken stock and heavy cream.
Whisk cream in until mixed.
Add salmon and poach at a simmer until salmon is done. If salmon has skin, I cook that for a couple of minutes and then flip and peel off skin.
Turn during cooking. Cooking time depends on the thickness of the salmon and the heat of the burner.
