Chicken Breasts stuffed with Spinach and Goat cheese

Ingredients
4 tsp EVOO2 Garlic cloves minced1 (1/2) pound fresh spinach4 (6oz) boneless, skinless chicken breasts4 oz low fat goat cheese1/2 tsp blak pepper
Directions
Preheat oven to 350. Heat 2 Tbsp of oil in skillet and cook garlic and spinach over medium heat. Pound out chicken breast to about 1/4 inch so that it will cook evenly. Spread goat cheese onto chicken breast and layer spinach on top. Roll up and secure with toothpick. Spray baking dish with no stick spray and add rolled chicken breast. Bake in oven for 30 minutes.
