GF Macaroni and Cheese

Ingredients
Preheat oven to 375 degrees.In large pot, boil noodles, drain. In another saucepan, melt butter and "flour" together to make a roux, cook for 3-4 minutes until golden. Add almond milk, mustard powder, bay leaf, salt, pepper. Cook until thickened stirring with a whisk often. In a small bowl, scramble the egg. Temper it with some of the sauce and add back to pan. Add 2 cups cheddar cheese stirring to melt. Mix sauce together with noodles, top with gluten free "breadcrumbs" premixed with Parmesan cheese. Bake for 30 minutes or until golden and bubbly.
