1 1/2 t. olive oil1 t. ground cumin1 1/4 c. sliced fresh mushrooms1 c. Red Gold mild salsa1 c. diced fresh tomatoes1 1/2 c. canned tomatoes and juice ( small can)1 1/2 c. frozen corn12 oz cooked chicken breast meat -- cubed6 c. water -- broth from cooking chicken and water1 T Better than bouillon chicken base
1. Saute mushrooms in olive oil. Stir in cumin.
2. Add salsa and chicken -- cook 1-2 minutes.
3. Add tomatoes, corn, water/broth. Heat until warm through.
