Classic Meatloaf

2.25 lb ground beef (93% lean)1/4 onion, chopped1/2 red bell pepper, chopped2 Tbsp Worcestershire sauce9 saltine crackers, crushedsalt & pepper, to taste8oz tomato sauce1/2 c brown sugar, packed
In a skillet, saute onions and bell pepper, to soften. Cook about 5 minutes, and then remove from heat to cool.
in a separate bowl, mix beef and other ingredients. Add cooled onion/peppers (reserve tomato sauce and brown sugar). Put half of the tomato sauce mixture into the meat, and mix in. Put in an 8x11 pan, and top with remaining tomato sauce mixture. Cook at 350 for 30 minutes, then increase temperature to 375 and cook for 20 additional minutes.
