Chocolate Muffins with Butterscotch Chips

Ingredients
1 cup + 2 tbsp unbleached cake flour3/4 cup all-purpose flour1/4 cup brown sugar substitute1/4 cup packed brown sugar1/4 cup cocoa powder1 tsp baking powder1 tsp baking soda1/4 tsp salt1/2 cup warm water1/2 cup skim milk1/4 cup unsweetened applesauce1 tbsp red wine vinegar1 tsp vanilla extract1 egg1/2 cup butterscotch chipsCooking spray + muffin liners
Directions
1. Preheat oven: 400 degrees.
2. Whisk together flour, sugars, cocoa, baking powder, baking soda, and salt.
3. Whisk water, milk, applesauce, vinegar, vanilla, and egg. Add to dry. Stir until incorporated.
4. Fold in 3/4 of butterscotch chips.
5. Spray muffin liners with cooking spray.
6. Evenly distribute batter. Top with remaining butterscotch chips.
7. Bake 15 minutes, rotating halfway through. Toothpick inserted into center should come clean.
8. Let cool for 5 minutes then transfer to rack.
