White Bean & Broccoli Soup

1 head broccoli (1 pound), cut into florets, stems sliced1 tablespoon extra-virgin olive oil1 onion, diced3 garlic cloves, slicedOne 15-ounce can white beans (cannellini or other), drained2.5 cups chicken stockKosher salt and freshly ground black pepper4 Tbls pine nuts, toasted (1 Tbl each serving)4 Tbls Parmesan, shredded (1 Tbl each serving)
Steam broccoli on stovetop or in microwave until tender, about 3 minutes.
Heat oil in a medium pot over medium heat. Saute onion and garlic until translucent, about 5 minutes.
Add beans and stock and bring mixture to a simmer.
Remove from heat and add broccoli then puree with an immersion blender. Season to taste with crushed red pepper flakes, salt and pepper. Sprinkle each bowl with 1 Tbl each toasted pine nuts and shredded Parmesan.
Serving Size: Makes 4 1-cup servings (garnish included n calories)
