Low fat Apple Carrot Spice Muffins

Ingredients
1/3 c. ground flax seeds3/4 c. wheat bran1 c. rolled oats1 c. whole wheat flour1 c. all purpose flour1 1/2 tsp. baking powder1/2 tsp. ground nutmeg2 tsp. ground ginger2 tsp. ground cinnamon1/2 c. brown sugar1 1/2 c. grated carrots1 c. unsweetened applesauce1 1/2 c. lowfat buttermilk2 large eggs3 egg whites1 tbsp. vegetable oil
Directions
preheat oven to 350 degrees C and line or grease muffin tins
combine all dry ingredients in large bowl
add grated carrot
combine wet ingredients together
stir wet ingredients into dry ingredients just until combined
divide evenly into muffin tins
bake for 18 to 25 min or until toothpick comes out just dry
