Split Pea with Ham and Bacon Soup

1 lb dried, Split Peas, sorted and rinsed 1 Cup Diced Onion1 Cup Diced Celery1 Cup Diced Carrots 2 Large Potatoes2 Cups Diced Ham (cooked)2 Cups Diced Bacon (cooked)8 Cup Chicken Broth1 Tbsp Extra Virgin Olive Oil 2 Tbsp Bail
Cook Bacon, Dice and put off to the side.
In your soup pot, add the Olive Oil, Onion, Celery, and Carrots. Cook over Medium-Low Heat just until the Onions are slightly light Brown/Yellow.
In crease heat to High and Add the Chicken Broth, Potatoes, Ham, Bacon, and split peas. Add Basil to taste. Bring to a boil.
Reduce heat, cover, and simmer for 45 Minutes (or until peas are super tender)
