12 oz (or 3 breasts) chicken, thawed, 1-in pieces1 red bell pepper, chopped2 green onions, sliced3 baby carrots, chopped1 broccoli crown, chopped1 garlic clove, minced1/4 cup reserved pineapple juice20 oz can pineapple chunks1/3 cup lite soy sauce1/2 cup water1 tsp red pepper flakes3/4 tsp garlic powder1/4 tsp ground ginger1/2 tbsp sesame oil1/2 tbsp olive oil
1. Stir reserved pineapple juice, soy sauce, water, red pepper flakes, and garlic powder. Set aside.
2. Heat oil in non-stick skillet over medium-high heat. Add chicken. Cook 4-5 minutes.
3. Add red pepper, carrots, broccoli, and ginger. Cook 2 minutes. Add garlic and soy sauce mixture. Stir and cook 4-5 minutes. Stir in green onion. Cook 2-3 minutes.
4. Serve alone or with brown rice.
