Pork Scallopini Saute Toss

Ingredients
1 pkg pork scallopini1 16oz mushrooms2 cups baby spinach2 tablespoons extra virgin olive oil4oz or 1/2 cup white cooking wineseasonings to your taste
Directions
in a pan combine white cooking wine and olive oil. add pork scallopini slices to pan brown one side , flip, brown oposite side. while browning the second half of the pork add ontop mushrooms sliced and spinach. cover and let cook for 5 mins. remove from heat; make sure pork is cooked through, and spinach is wilted. add seasonings as you would like and serve with wild rice or mash potatoes.

Serving Size: makes four servings or more based on number of pork scallopini slices added.
