Kale & Chicken Soup

Ingredients
8 oz Chicken Breasts1 qt Chicken Stock1 qt water2 bay leaf1 tsp dry thyme2 Clove Garlic, minced3 med Carrots, minced2 Stalks Celery, minced1/4 Lg Onion, minced1 Bunch Kale, chopped2 C chopped Zucchini3 Red Potatoes, cubedSalt & Pepper
Directions
Cook chicken in water and stock seasoned with bay leaves, thyme, salt and pepper until tender. Remove and cool slightly - break up into chunks. Add next seven ingredients and cooked chicken into stock. Simmer until tender. Taste for seasoning.
