1 small onion sliceddash salt and pepper1 tbsp curry powder ( to taste, start with 2 tsp)4 chicken breasts, boneless, skinless1 cup low fat evaporated milk2 tbsp Sour cream, Gay Lea low fatOil spray (or Pam)
Spray pan with oil (I use Pampered Chef spritzer with olive oil.) Stir fry chicken until done. Remove to plate. Spritz pan with a little more oil, stir fry onion with a dash of salt and pepper. Stir in curry powder, chicken, evaporated milk. Simmer for a few minutes. Stir in sour cream and serve.
