Chicken Marinara

Ingredients
1/4 c. olive oil3/4 c. onions, diced3/4 c. carrots, diced3/4 c. red bell peppers, diced1 lb. chicken breast, diced2 T. fresh garlic minced3/4 c. mushrooms, sliced3/4 tsp. basil1 1/2 tsp. oregano1/4 tsp. sage1/2 tsp. black pepper4 1/2 c. chicken broth1 3/4 c. tomato paste
Directions
Heat oil over medium heat, Saute onions, peppers, and carrots for 5 min. Add chicken and garlic. Cook for 10 min. stirring frequently. Add muchrooms and all spices and mix well. Add broth and tomato past and stir until smooth. When sauce begins to boil again, reduce heat to a simmer and cook 20 min. or until sauce has reached a medium-thin consistency. Pour hot sauce over hot pasta. Sprinkle with Parmesan cheese to serve.
