*Flour, white, 1 cup *Whole Wheat Flour, 0.5 cup Baking Soda, .5 tsp Baking Powder, 1 tsp Cinnamon, ground, .5 tsp Salt, .25 tsp Ginger, ground, .25 tsp Old Fashioned Quaker Oatmeal- Plain, 1 cupLow Fat Plain Yogurt (I used Fage - 0%), .5 cupPumpkin, cooked, .5 cup, mashed Brown Sugar, 2/3 cup, packed Egg, fresh, 1 large
Preheat oven to 350 degrees. Line 12 muffin cups with paper liners. Combine dry ingredients and set aside. Mash oil and sugar with a fork until blended. Stir in the egg, pumpkin, and yogurt until well blended. Stir in the flour mixture just until blended. Bake 20-25 minutes. Cool on rack and enjoy!
