Portabello Mushroom Burgers

Ingredients
2 Portabello Mushrooms, washed1/2 yellow bell pepper, deseeded and chopped1 small onion, peeled and chopped2 cloves garlic, peeled and diced small1/2 tsp oregano1/2 tsp basil1/2 tsp thyme1 tbsp Extra virgin olive oil2 oz mozzarella cheese grated
Directions
Preheat broiler, Spray cookie sheet, wash portabello mushrooms, saute in skillet for a few minutes, then place on cookie sheet.
Saute` with 1/2 the olive oil, the onions, garlic and peppers until soft. Put onion and pepper into portabello mushroom, cook until tender about 10 mins careful you don't burn them, sprinkle on the cheese, grill until cheese melts, remove from grill.
Warm the buns, place portabello mushroom on the burger, top with tomatoes and lettuce, if desired.
Serve.
