Sichuan Tofu with Mushrooms

Sauce:3 tbl reduced sodium chicken broth1 tbl ketchup or tomatoe paste2 tsp Chinkiang vinegar or balsamic vinegar1 tsp sugar1 tsp reduced sodium soy sauce1/2 tsp sesame oil1/4 tsp cornstarch1/4 tsp crushed red pepper, or to tasteTofu and mushrooms:14 oz water packed extra firm tofu, rinsed1/2 tsp salt2 tbl canola oil, divided1 tbl minced garlic1/2 onion chopped small2 cups sliced white mushrooms
Sauce:
Whisk all ingredients together and set aside.
Tofu and Mushrooms:
Place tofu on several paper towels and sprinkle with 1/4 tsp of salt. Turn over and sprinkle with remaining salt. Place paper towels on top and weight down with a plate or pan. Set aside for 5 minutes. Cut into 1 in cubes
Heat skillett until hot on high with 1 tbl oil. Add garlic and onions and cook until fragrant, 30 sec. Add Mushrooms and stir fry until soft. Transfer to plate
Add remaining oil to pan and reduce heat to med. Add tofu. cook until both sides brown, about 5 min each side. Ad Sauce and mushrooms back to pan. Increase heat to high and stir fry until sauce thickens and coats tofu.
Serve immediately.
