Lowfat Pumpkin Protein Raisin Cookies

Ingredients
1/2 c whole wheat flour2 scoops of vanilla whey isolate1/2 c all purpose flour2 T flaxseed meal1/4 c old fashion oats1 t cinnamon1/2 t ginger1/4 t nutmeg1/4 t salt1/2 c canned pumpkin8 oz of tofu, processed until smooth1 t vanilla extract1/2 c raisins
Directions
Preheat oven to 375 degrees.
Mix dry ingredients together in a bowl.
Put tofu in food processor and blend until smooth.
Put pumpkin, tofu, vanilla in a mixer. Add dry ingredients and blend until mixed. Add raisins to mixture.
Place silpat sheets on two baking sheets. Scoop up a heaping teaspoon of cookie dough and place on the sheet space 2 inches apart. Bake for 15 minutes. Cool on cooling rack.
