Cod with White Wine Sage Sauce

Ingredients
2 cod filletslemon pepper seasoning salt1 tsp olive oil1 clove garlic, sliced or cut in half1 green onion, sliced1/2 cup white wine (or white cooking wine)1/2 Tbsp butter1 tsp fresh sage, chopped1 tsp capers
Directions
Season the cod fillets with lemon pepper seasoning salt, or a mixture of lemon pepper and salt. In a medium skillet, cook garlic in olive oil until just browned. Remove garlic pieces and discard. Cook fish in flavored oil until fish flakes easily with fork. Only flip once and do not move while it's cooking so the fish gets a nice crust. Set aside.

In same skillet, add green onion and cook about 30 seconds, then deglaze the pan with the wine, scraping all the browned bits at the bottom. Add the butter, sage, and capers. Simmer over medium heat until the sauce has reduced by about 1/3. Season with pepper and salt if necessary. Pour sauce over fish and serve.
