Balsamic Brown Rice Salad

Ingredients
2 C water1 C brown rice1/4 C diced red onion1/2 C diced celery1/4 C dried cranberries (dried cherries work too)1/2 C balsamic vinaigrette salad dressing1 T Splenda (or Stevia or honey)
Directions
In a saucepan, bring water to a boil. Stir in rice, cover, and reduce heat to low. Simmer for 45 to 60 minutes, or until done.

Transfer rice to a serving bowl, and stir in onion, celery, cranberries, salad dressing, and SPLENDAŽ Granulated Sweetener. Cover, refrigerate, and serve cold.
