Tofu and Bok Choy with Peanut Sauce

1# extra-firm tofu, cubed and patted dry4 cups chopped bok choy1/2 cup peanut butter2 Tbsp soy sauce2 Tbsp lime juice
1. Heat large skillet over high heat. Add some oil and cook tofu until golden and crispy. Remove from pan.
2. Re-heat skillet and small amount of oil. Add greens and stir-fry until green parts are wilted.
3. Combine peanut butter, soy sauce and lime juice in a small bowl. Add water until sauce is the desired consistency.
4. Add peanut butter sauce to stir-fried greens and mix well. Add tofu and stir to coat.
Serving Size: Makes 4 servings
