1 tbsp olive oil2 tsp chopped garlic1 large onion, diced1 large eggplant, peeled and diced1 red bell pepper, diced1 yellow bell pepper, diced1 orange bell pepper, diced3 zucchini, diced1 15 oz can garbanzo beans, drained and rinsed2 cups crushed tomatoesSalt, pepper, crushed red pepper flakes, thyme and basil to taste
Heat the olive oil in a large stock pot. Add garlic and onion; saute till translucent. Add eggplant, peppers, zucchini; saute till slightly softened. Add beans, tomatoes, and spices; simmer on low till heated through and veggies have softened. Add water if you want a "soupier" consistency.
