Stuffed Cabbage Soup

1 tablespoon salted butter1 large clove garlic - clean and finely chopped1 pound ground chuck1 medium onioned clean and large diced2 32 oz cans of petite diced tomatoes1 small to medium head of cabbage rough chopped12 Cups water3/4 Cups Rice
saute minced garlic clove in 1 tablespoon of butter
Add one pound of lean ground chuck, saute until cooked and crumbly.
add one large diced yellow onion
pour in 2 32 oz cans of petite diced tomatoes with juice
add rough chopped cabbage and 8 cups of water
Bring to a rapid boil and reduce to medium to low heat
Allow soup to simmer until cabbage is tender.
Add 4 cups water and 3/4 rice and again allow to simmer until rice is done and cabbage is very soft
Serving Size: makes 10 one cup servings
