Ingredients

    potatoes, about 5 pounds small (about 20)
    bacon, 6 slices pre-cooked and crumbled
    celery, 1 cup diced
    onion or shallots, 1 cup chopped
    garlic, 1-2 cloves minced
    parsley, 1/2 cup chopped
    chives, 3 tbsp chopped
    apple cider vinegar, 1.5 cup
    mustard powder or seed, 2 tsp
    salt and pepper to taste

Directions

Cut your potatoes into quarters (or smaller - I like my potatoes chunky). Add a pinch of salt, then cover with water. Boil the potatoes until tender, then drain and rinse to cool.

Add the bacon, celery, onion, garlic, parsley and chives to the potatoes. Combine the vinegar, mustard powder, and salt and pepper as desired, and pour over the potatoes. Toss to coat, and store for at least an hour.

Best served warm or room temperature. Makes about 18 1-cup servings.

    Very Good
    Made a 1/2 recipe for a family of 4 and still had some left for a lunch side dish the next day. Good eats!! - 5/23/14
