Apple Pie Bread Pudding (microwavable high-protein snack!)

2 tbsp unsweetened applesauce1 tbsp unsweetened vanilla almond milk1/4 cup egg whites1/8 tsp apple pie spice1/8 tsp cinnamon1/4 tsp vanilla1 slice light whole-wheat breadoptional: sugar-free maple syrup for topping, or stevia sprinkled on top
Toast bread in toaster.
Combine egg whites, milk, applesauce, vanilla, and spices in a small bowl and mix well so spices are incorporated.
Tear up bread into a medium or large microwavable mug; pour egg mixture over top and stir gently to coat completely.
Microwave for about 3 minutes or until thoroughly set.
Serving Size: makes 1 serving
