Pork Posole (Pozole)

Ingredients
2 lbs pork roast1 large can white hominy2 cubes chicken bouillon1-3 dried Guajillo chiles2 cloves garlic1/2 medium onion2 bay leavessalt and pepper to tasteFor garnish (not included in nutritional values):sliced radishesshredded lettuce or cabbagecilantrogreen onionlimesavocadosalsatortilla chips (baked or regular)
Directions
Trim visible fat from pork roast. Place roast, chicken bouillon, chiles, garlic, bay leaves, and onion in crock pot (leave everything whole). Set on high for 3-4 hours or low 6-8, or until roast is tender.

Skim foam off surface and remove chiles, garlic, bay leaves, and onion. Shred pork, leaving bite-size pieces. Put pork back in crock pot.

Drain hominy; add to crock pot. Cook on high for 45-60 more minutes.

Prepare garnishes as desired and add to soup to taste.
