Aimee's chicken salad

Ingredients
2.5 lbs boneless skinless chicken breasts (I usually use a bag of frozen1 medium onion - chopped fine1 C. Light mayoSalt & Pepper to taste
Directions
Poach chicken. Let it cool until it is easy to work with, than chop it up fine.

Mix chicken, mayo and onions well. Add salt and pepper to taste.

Refrigerate until cold and enjoy!!! Great with crackers, alone or on a sandwich.
