Carrot Ginger Tofu Soup - Vitamix

Carrots, raw, 4 mediumOnions, raw, .25 small Garlic, 4 cloves *Canola Oil, 1 tbsp Salt, .5 tsp *Pepper, white, .25 tsp Ginger Root, 3 tsp Mori-Nu, Tofu, silken, soft, 70 gramsVegetable Broth, 2 cup
Place carrots, onion and garlic in Vitamix and blend on high for 10 seconds..
heat oil in pan and saute chopped ingredients until soft. Add some broth if needed.
Place remaining ingredients in blender and add sauteed ingredients and secure lid. Blend on High for 4 minutes until heavy steam escapes from vented lid.
Serving Size: makes 4 servings about 1 1/4 cup each
