Chicken Piccata Giada's

Ingredients
2 boneless chicken breasts5 tbsp. extra virgin olive oil6 tbsp. butter1/3 c. lemon juice1/2 cup chicken broth1/4 cup capers, drained and rinsedflour
Directions
Butterfly the chicken breasts and cut in half. Pound thin. Dredge in flour and shake off excess. Heat 2 tbsp. butter and 3 tbsp. oil until hot. Add 2 chicken breast halves and saute for 3 minutes each side. Remove to plate and keep warm. Add 2 tbsp. butter and 2 tbsp. oil to pan and saute remaining 2 chicken breast halves for 3 minutes each side. Remove to plate and keep warm. Add lemon juice, broth and capers to pan. Bring to a boil. Return chicken breasts to pan and simmer for 5 minutes. Stir in remaining 1 tbsp. of butter and whisk vigorously.
