Low Sugar, High Protein Blueberry Muffins

Ingredients
2 scoops Pure Protein powder1 1/4 c flour1/3 c xylitol2 tsp baking powder1/4 tsp salt1 egg, beaten3/4 c skim milk1/4 c cunsweetened applesauce
Directions
Preheat oven to 400.

Blend dry ingredients together in a big bowl. Whisk wet ingredients together in a smaller bowl. Fold wet ingredients into dry ingredients. Pour batter into muffin cups. Bake 15 minutes or until toothpick comes out clean.

Serving Size: Makes 12 good sized muffins
