I cup finely diced onion3 tbsp olive oil6 oz boneless skinless chicken breast3 oz boneless skinless chicken thigh1 can cream of chicken soup4 cups chicken broth2 cups wild rice (cooked)1 cup frozen mixed vegetables
Dice chicken and onion, brown in olive oil. Add 1 can cream of chicken soup, chicken broth, brown rice and vegetables. Season to taste and simmer until thickened.
