2 Tbl bacon fat2 Tbl olive oil3 leeks, chopped6 russet potatos, peeled and cut 1"4 cups vegetable brothwater as needed
Put bacon fat and olive oil in pan. Chop up leeks, add to pan cover and cook on low while you prepare the potatoes. Add broth. Add potatoes. Add water as neccessary so that it stirs freely. Cook until potatoes are soft. Blend in blender to make creamy. Serve with black pepper.
