Curry Sweet Potato and pineapple Lentils

Ingredients
3 tbsp coconut oil1 onion diced5 garlic cloves diced1 zucchini diced3 stalks of celery diced1 11 oz sweet potato, diced2 cups lentils4 cups water1 can dole pineapple chunkssalt, pepper, curry and cayenne to taste
Directions
Dice onion, garlic, celery and zucchini and saute in coconut oil until fragrant. Dice sweet potato and add to pot. Add 2 cups lentils, cover with water, stir, bring to a boil. Lower heat to simmer, add curry and cayenne to taste. Simmer for about an hour. Add salt and pepper and pineapple. Stir and heat through. Serve hot.
