PasteSesame Oil, 1 1tsp *Peter Pan Peanut Butter, 0.5 tbsp *chopped green chillies, 1 oz *Fish Sauce, 0.5 tbspGarlic, 1 clove Coconut cream lite, one can *Bok Choy, raw-shreaded, 4 bunchesGreen Peppers (bell peppers), 1 cup, cut in chunksPeppers, sweet, red, raw, sliced, 1 cup cut in chunksChicken Breast, no skin, 1kg cut into small cubes
put all the paste ingredients along with a couple of tablespoons of coconut cream in blender and blend until almost smooth. Pour into hot non-stick pan or wok and cook until boiling. Add remaining coconut cream and bring to rapid boil. Add chopped chicken and cook until chicken is done. Pile chopped veggies on top and cover cook for about 3 mins. Serve straight away.
