Chickpea Salad (Like chicken salad without the meat!)

Makes two sandwiches1 can of chickpeas, drained and rinsed1/4 cup light mayonnaise1 tablespoon whole grain mustard2 teaspoons celery seeds1/4 cup chopped celery (about one rib)2 tablespoons sliced scallions (about two scallions)a few turns of the peppermilla pinch of cayenne pepper (optional)Celery or regular salt to taste
Place chickpeas in the bowl of a food processor and pulse two or three times to roughly chop. Add remaining ingredients and pulse two or three times more to incorporate. Also can be mixed by hand with a fork, if no food processor is available.
