Poached eggs with Garlic Greens

2 large eggs1 cup chopped kale or other greens1 clove garlic1 tsp olive oilsalt and pepper to taste
Heat olive oil over medium heat. Add chopped kale and sautee until bright green. Add minced garlic and a dash of salt and pepper. Continue to sautee to desired doneness. Meanwhile, poach eggs in simmering water with a splash of white vinegar (keeps the whites intact). Cook eggs to desired doneness. Serve eggs on top of kale. A whole wheat English muffin on the side is really nice too!
