Italian Zucchini

Ingredients
5 Medium Zucchini, cut in half lengthwise and then thickly sliced1 14.5 ounce can italian-style diced tomatoes, undrained1 TBSP minced garlic1 large egg, beaten1/3 cup grated parmesan cheese.
Directions
Spray large skillet with Olive Oil cooking spray. Heat pan and add garlic. Stir until fragrant. Add Tomatoes and zucchini. Cover and cook about 30 minutes on low, or until zucchini is translucent, stirring occasionally. Mix parmesan cheese into beaten egg and slowly stir into zucchini. Cook and stir for about 2-3 minutes.
