Banana Soy Flour Pancakes

Ingredients
1 cup White flour1/4 cup and 1/3 cup of soy flour1 tbsp baking powder1/8 tsp. salt2 tbsp. Bob's Red Mill flaxseed meal or ground flaxseed1 large banana1/2 tsp vanilla1/2 cup of milk1/3 cup of sour cream1 tbsp. olive oil
Directions
Using a medium non-stick pan, turn heat on medium. Add dry ingredients to a bowl. Mix well. In another bowl, mash banana and add eggs. Mix well. Set aside. Add milk, vanilla, sour cream, and egg mixture to dry ingredients. Mix well.

Add olive oil to pan. Pour small amount of mixture into pan (should be able to fit 3 small pancakes into one pan). Flip when pancakes begin to bubble.

Top with syrup or other toppings when ready to eat.
