Beer Battered Cod - Vienniese Style

9 cod fillets1 tbsp lemon juice2 tsp salt1 1/2 cups All-Purpose Flour1 tbsp vegetable oil2 egg yolks3 egg whites3/4 cup Beer3/4 cup oil for frying
Season the Cod Fillets with salt and lemon juice and set aside.
In a small bowl, separate the yolk from the white and set the egg whites aside. Add the flour, beer and oil to the egg yolks and beat until you have a smooth batter. Let rest for 30 minutes. Just before the 30 minutes is up, beat the egg whites until they form stiff peaks. Gently fold the egg whites into the batter.
In a pan, heat the 3/4 cup oil. Gently coat each fillet in batter and place in the hot oil. Brown gently on each side until crispy and golden brown. Remove from the pan and serve with any sides you enjoy.
