Coriander & Lime Marinated Chicken

Ingredients
4 chicken leg quarters2 large cloves garlic, crushedgrated zest and juice 1 lime2 heaped tsp grated ginger2 tbsp chopped coriander2 tbsp soy sauce1 red chili
Directions
Prepare the chicken first - slash the skin of each chicken portion 4 - 5 times and place in a large freezer bag.
In a small bowl mix together the crushed garlic, lime zest and juice, grated ginger, coriander and soy sauce.
De-seed and finely chop the chili and add to the marinade. Pour the marinade into the bag and mix well to thoroughly coat each chicken piece.
Tie the bag securely and leave to marinate for a least 1 hour.
Preheat barbecue and heat oven to 220*C/425*F.
Lay the chicken pieces on a baking sheet and cook in the hot oven for about 30 - 35 minutes.
Transfer the chicken pieces to the grill and continue to cook until the skin is nicely charred and the meat is completely cooked through.

    This was quite good. I like anything you can marinate the night before and then pop in the oven after work. I might use more lime next time; I could taste it but not as much as I'd like. - 3/18/08

    From the smell while this was cooking, I was sure it would become one of my favorite recipes. Unfortunately, the taste didn't live up to the smell. I suspect the coriander overpowered the other flavors, but whatever the reason, it was sort of so-so. - 9/14/07
