1 tsp dry yeast1 1/4 cups warm water3 cups unbleached white flour, plus a bit more for kneading1 1/2 tsp salt1 Tbsp olive oil, plus a little more to baste on top of dough before baking'Sesame seeds to sprinkle on top of dough
Dissolve yeast in the warm water. Let stand 10 minutes. In a large bowl combine 3 cups flour and salt. Add olive oil to the yeast water. Pour the yeast water over the flour and stir well. Once mixed (it will be sticky) knead dough on a floured surface for about minutes, adding flour to keep the dough from sticking. The dough should be soft and slightly tacky. Place dough in a greased bowel, cover with a damp towel and let rise for about an hour.
Punch the dough down and place on a lightly floured surface. Cut dough into 3 equal parts and form each piece into a ball and let rest for about 20 minutes.
Preheat oven to 500 degrees. Roll each ball of dough into 9" rounds. Place the rounds on baking sheets or baking stone. Brush with olive oil and sprinkle with sesame seeds. Let rest for 10 minutes. Bake for 8-10 minutes.

AZURELITE
I made 1/2 the recipe, then divided the dough into 4 balls. Due to making 3 other things at the same time, I forgot the olive oil and sesame seeds. The naan tasted as it should, and next time I'll roll them out a bit thinner and use the oil. I've never been served naan with sesame seeds-will omit - 2/19/16
