Chicken Florentine

Ingredients
3 Cups uncooked barilla whole grain pasta1 1/4 cups 1%milk1 tablespoon extra virgin olive oil1/4 tsp ground nutmeg14 oz uncooked chicken breast cut into bite sized pieces1 can (14.5 oz) diced tomatoes1 cup fresh sliced mushrooms1 bag (6 oz) fresh baby spinach (about 3 1/2 cups)1 cup shredded mozzarella reduced fat
Directions
1. cook and drain pasta as directed on package
2. meanwhile, in small bowl, combine milk, flour and nutmeg.
3. cook chicken on med high heat in 12 inch skillet until browned. Stir in tomatoes, mushroom and spinach. Cook about 5 minutes until mushrooms are tender.
4. reduce heat to low, stir in milk mixture. cook about 3 mins till thickened. sprinkle cheese on top , cover and let stand 1-2 minutes till cheese is melted

Serving Size: makes 6 servings (1 and 1/3 cups each)
