Hearty Sprouted Bean and Quinoa Salad

2 & 1/3 cups cooked sprouted bean trio1 & 3/4 cup cook quinoa1/4 cup chopped red peppers1/3 cup chopped celery1/4 cup olive oil6 TBLS white wine vinegar1 tsp dijon or spicy brown mustardsalt and pepper to taste
Cook sprouted beans and quinoa according to packaged directions. I use Tru-Root from Costco. You can save any extra for other recipes. Chop vegetables while cooking and add to measuredsprouted beans and quinoa. Mix dressing and pour over salad. Mix and chill.
