Chicken Thighs in Tomato Vinegar Sauce

1 lb. chicken thighs2 1/2 c. chopped onions1/2 c. white wine9 tblsp. tomato sauce2 tblsp. balsamic vinegar1/2 tsp. kosher salt1/2 tsp. tarragon1/2 tsp. black pepper1/2 tsp. brown sugar
In a non-stick skillet, lightly coat with cooking spray and put on medium heat.
Add onions and cook for 8 minutes, stirring occasionally, then add chicken thighs and cook 5 minutes a side.
In a small bowl, mix remaining ingredients, then add to the chicken and onions, reduce heat, and cover skillet. Cook for 20 minutes, then serve over lentils, polenta, or rice.
