Eggplant Parmesian (without the parm)

Ingredients
1 eggplant1 cup tomato sauceOlive oil cooking spray1 tsp salt1 tsp ground pepper1 Tbsp garlic powder1 Tbsp onion powder
Directions
Makes 2 servings

Cut the ends off the eggplant and cut into 4-6 (1/4-1/2 inch) strips

Mix dry ingredients in small bowl

Spray both sides of the eggplant strips with cooking spray

Sprinkle both sides of the eggplant strips with the dry mixture

Cook strips on grill (George Foreman) approximately 5 minutes

Divide the strips in half (2 servings)

Top each serving with 1/2 C. of tomato sauce

    So great and easy for summer! We grilled these on the bbq! My husband was hesitant because it's not the crusty fried eggplant he's used to, but he loved it! We did add 1 Tbsp of fresh shredded parm to each serving but I would have eaten without too! - 7/9/11
